How to make it

  1. Preheat the oven to 350 F (175 C) and lightly butter a 9-by-13-inch baking dish.
  2. Melt the butter in a skillet over medium heat and cook the onion for 4 to 5 minutes until soft, then add the garlic and cook 1 minute more until fragrant.
  3. In a large bowl, combine the crumbled cornbread, shredded chicken, cooked onion and garlic, chicken broth, cream of chicken soup, salt and pepper, stirring until evenly moistened.
  4. Fold in about half of the shredded cheese, then spread the mixture into the prepared baking dish and smooth the top.
  5. Scatter the remaining cheese over the surface and cover the dish loosely with foil.
  6. Bake covered for 25 minutes, then remove the foil and bake another 15 to 20 minutes until the casserole is bubbling at the edges, heated through to 165 F (74 C), and the cheese is golden.
  7. Let the casserole rest for 10 minutes so it sets up before serving warm.
