How to make it

  1. Bring a large pot of well-salted water to a boil and cook the pasta until just al dente according to the package timing, then reserve half a cup of pasta water before draining.
  2. While the pasta cooks, melt the butter in a large skillet over medium-high heat, add the sliced mushrooms in a single layer, and cook undisturbed for 3 to 4 minutes until browned, then stir and cook 2 minutes more.
  3. Add the shallot and garlic and saute for 1 to 2 minutes until fragrant, being careful not to let the garlic burn.
  4. Pour in the white wine to deglaze, scraping up any browned bits, and let it simmer for 2 minutes until reduced by half.
  5. Stir in the chicken broth and heavy cream, bring to a gentle simmer, and cook for 4 to 5 minutes until the sauce thickens slightly.
  6. Stir in the grated parmesan until melted and smooth, then season with salt and black pepper.
  7. Add the drained pasta to the skillet, toss to coat, and loosen with a splash of reserved pasta water if needed, then finish with chopped parsley and serve immediately.
