Creamy Mushroom Pasta

How to make it
- Bring a large pot of well-salted water to a boil and cook the pasta until just al dente according to the package timing, then reserve half a cup of pasta water before draining.
- While the pasta cooks, melt the butter in a large skillet over medium-high heat, add the sliced mushrooms in a single layer, and cook undisturbed for 3 to 4 minutes until browned, then stir and cook 2 minutes more.
- Add the shallot and garlic and saute for 1 to 2 minutes until fragrant, being careful not to let the garlic burn.
- Pour in the white wine to deglaze, scraping up any browned bits, and let it simmer for 2 minutes until reduced by half.
- Stir in the chicken broth and heavy cream, bring to a gentle simmer, and cook for 4 to 5 minutes until the sauce thickens slightly.
- Stir in the grated parmesan until melted and smooth, then season with salt and black pepper.
- Add the drained pasta to the skillet, toss to coat, and loosen with a splash of reserved pasta water if needed, then finish with chopped parsley and serve immediately.
