Crispy Chicken Burgers

How to make it
- Mix the ground chicken with the lemon juice, half of the poultry seasoning, salt and pepper, then form into 4 even patties shaped to fit your buns and chill them for 15 minutes to firm up.
- Set up a breading station with the flour seasoned with the remaining poultry seasoning, garlic powder and smoked paprika in one bowl, and the egg beaten with the buttermilk in another.
- Dredge each patty in the seasoned flour, dip into the buttermilk and egg, then dredge again in the flour, pressing firmly so a thick, craggy coating clings all over.
- Heat the oil in a deep, heavy pot to 175°C (350°F), using a thermometer to keep the temperature steady.
- Carefully lower the patties into the hot oil two at a time and fry for 6 to 8 minutes, turning once, until the coating is deep golden and crisp and an instant-read thermometer in the center reads 74°C (165°F).
- Drain the fried patties on a wire rack set over paper towels and season lightly with salt while still hot.
- Toast the buns, then build each burger with the crispy chicken patty and your choice of toppings such as lettuce, pickles and a creamy sauce, and serve immediately.
