How to make it

  1. Preheat the oven to 375F (190C) and pat the chicken breasts dry, then season them lightly with salt.
  2. Toast the sliced almonds in a dry skillet over medium heat for 3 to 4 minutes until golden and fragrant, then set them aside.
  3. Thinly slice the onion, then warm the olive oil in an ovenproof skillet over medium heat and soften the onion for about 6 minutes until translucent.
  4. Stir the curry powder into the onion and cook for 1 minute to bloom the spices, then whisk in the honey, mustard, and chicken stock to form a glaze.
  5. Nestle the chicken into the skillet and spoon the glaze over each piece, then transfer the skillet to the oven and bake for 20 to 25 minutes until the chicken reaches an internal temperature of 165F (74C).
  6. Spoon the pan sauce over the chicken once more and let it rest for 5 minutes so the juices redistribute.
  7. Scatter the toasted almonds and chopped parsley over the top and serve warm with rice or couscous.
