How to make it

  1. Preheat the oven to 180C and generously butter a 24 cm baking dish, then dust it lightly with a little of the sugar to give the custard something to grip.
  2. Wash and stem the cherries (leave them whole with stones for traditional flavour, or pit them if you prefer) and scatter them evenly across the base of the dish.
  3. Whisk the eggs with the sugar and salt until pale, then whisk in the flour until smooth, followed by the milk, vanilla and melted butter to make a thin, lump-free batter resembling crepe batter.
  4. Pour the batter gently over the fruit so the cherries stay distributed, then bake for 35 to 40 minutes until the clafoutis is puffed, golden and just set with only a slight wobble in the centre.
  5. Let it cool for at least 15 minutes so the custard firms up, as it will sink slightly as it settles.
  6. Dust with powdered sugar and serve warm or at room temperature, reminding guests to watch for stones if you left the cherries whole.
