How to make it
- Whisk the flour, sugar and salt in a bowl, make a well, crack in the eggs and gradually whisk in the milk to a smooth, thin batter the consistency of single cream.
- Melt the butter and whisk it into the batter, then rest it covered for at least 30 minutes so the flour hydrates fully and the crepes turn out tender.
- Heat a lightly oiled non-stick pan over medium heat, pour in a small ladle of batter and swirl the pan immediately to coat the base in a thin even layer.
- Cook for about 1 minute until the edges lift and the underside is golden, then flip and cook the second side for 30 seconds until lightly speckled.
- Slide each crepe onto a plate and repeat, stacking them as you go and wiping the pan with a little oil between every few.
- Serve warm folded into quarters with sugar and lemon for sweet, or fill with ham and cheese and warm briefly in the pan until the cheese melts for savoury.
