How to make it

  1. Heat the oven to 190C, then butter four ramekins generously with upward strokes and coat the insides with a little sugar, tipping out the excess.
  2. Melt the butter, stir in the flour and cook for 1 minute, then whisk in the milk gradually and simmer until you have a thick smooth base.
  3. Off the heat, stir the chopped chocolate and vanilla into the warm base until melted, then beat in the egg yolks one at a time.
  4. Whisk the egg whites with the cream of tartar to soft peaks, add the sugar in a steady stream and whisk to firm glossy peaks.
  5. Fold a third of the whites into the chocolate base to loosen it, then gently fold in the rest, keeping as much air as possible.
  6. Divide between the ramekins, level the tops and run a thumb around each rim, then bake for 12 to 14 minutes until risen and just set with a soft centre, and serve immediately before they sink.
