How to make it
- In a large bowl, whisk together the flour, baking powder, and seasoning salt until evenly combined.
- Pour in the hot tap water a little at a time, stirring with a fork, until the mixture pulls together into a shaggy, soft dough.
- Turn the dough onto a lightly floured surface and knead gently for about 1 minute, just until smooth; cover and let it rest for 10 minutes so the gluten relaxes.
- Divide the dough into 4 equal pieces and pat or stretch each one into a round disc roughly 6 inches across and 1/4 inch thick, poking a small hole in the center to help it cook evenly.
- Pour the vegetable oil into a deep, heavy skillet to a depth of about 1 inch and heat over medium-high until it reaches 350 F (a pinch of dough should sizzle immediately).
- Carefully lay one round into the hot oil and fry for 1 to 2 minutes per side, turning once with tongs, until puffed and deep golden brown.
- Lift the fry bread out and drain on paper towels, sprinkle lightly with salt while hot, and repeat with the remaining dough, serving warm.
