How to make it

  1. In a large bowl, whisk together the flour, baking powder, and seasoning salt until evenly combined.
  2. Pour in the hot tap water a little at a time, stirring with a fork, until the mixture pulls together into a shaggy, soft dough.
  3. Turn the dough onto a lightly floured surface and knead gently for about 1 minute, just until smooth; cover and let it rest for 10 minutes so the gluten relaxes.
  4. Divide the dough into 4 equal pieces and pat or stretch each one into a round disc roughly 6 inches across and 1/4 inch thick, poking a small hole in the center to help it cook evenly.
  5. Pour the vegetable oil into a deep, heavy skillet to a depth of about 1 inch and heat over medium-high until it reaches 350 F (a pinch of dough should sizzle immediately).
  6. Carefully lay one round into the hot oil and fry for 1 to 2 minutes per side, turning once with tongs, until puffed and deep golden brown.
  7. Lift the fry bread out and drain on paper towels, sprinkle lightly with salt while hot, and repeat with the remaining dough, serving warm.
