How to make it
- Wash the garden eggs, place them whole in a pot of water, and boil for about 10 to 15 minutes until soft, then drain, peel off the skins if tough, and mash them coarsely with a fork.
- Debone the smoked titus fish carefully, removing any bones, then flake the flesh and rinse it briefly in warm water to remove grit.
- Blend or pound the red bell peppers, tomatoes, and scotch bonnet with half of the onion into a coarse paste.
- Heat the palm oil in a pot over medium heat until it shimmers but does not smoke, then add the remaining sliced onion and fry for 2 to 3 minutes until fragrant.
- Pour in the blended pepper mixture and fry for 10 to 12 minutes, stirring often, until the raw smell is gone and the oil rises to the surface.
- Stir in the mashed garden eggs, the flaked fish, and the ground crayfish, then add the seasoning cube and salt and mix well to combine.
- Lower the heat and simmer the stew for 8 to 10 minutes so the flavors meld, stirring occasionally, then taste and adjust the salt before serving hot with boiled yam, plantain, or rice.
