How to make it

  1. Wash the garden eggs, place them whole in a pot of water, and boil for about 10 to 15 minutes until soft, then drain, peel off the skins if tough, and mash them coarsely with a fork.
  2. Debone the smoked titus fish carefully, removing any bones, then flake the flesh and rinse it briefly in warm water to remove grit.
  3. Blend or pound the red bell peppers, tomatoes, and scotch bonnet with half of the onion into a coarse paste.
  4. Heat the palm oil in a pot over medium heat until it shimmers but does not smoke, then add the remaining sliced onion and fry for 2 to 3 minutes until fragrant.
  5. Pour in the blended pepper mixture and fry for 10 to 12 minutes, stirring often, until the raw smell is gone and the oil rises to the surface.
  6. Stir in the mashed garden eggs, the flaked fish, and the ground crayfish, then add the seasoning cube and salt and mix well to combine.
  7. Lower the heat and simmer the stew for 8 to 10 minutes so the flavors meld, stirring occasionally, then taste and adjust the salt before serving hot with boiled yam, plantain, or rice.
