How to make it

  1. Peel the garlic cloves and crush them to a smooth paste with a pinch of salt using the flat side of a knife or a mortar and pestle.
  2. Finely chop the fresh rosemary leaves and mince the strip of lemon peel, taking care to use only the yellow zest and not the bitter white pith.
