How to make it
- Peel the garlic cloves and crush them to a smooth paste with a pinch of salt using the flat side of a knife or a mortar and pestle.
- Finely chop the fresh rosemary leaves and mince the strip of lemon peel, taking care to use only the yellow zest and not the bitter white pith.
- In a small bowl, combine the garlic paste, chopped rosemary, and minced lemon peel with the fresh lemon juice and let it sit for 5 minutes to mellow the garlic.
- Slowly whisk in the olive oil in a thin stream until the dressing emulsifies and thickens slightly.
- Season with salt and black pepper to taste, then whisk again and adjust the balance with a little more lemon juice if it needs brightness.
