How to make it

  1. Preheat the oven to 180C (350F) and grease and line a 20 cm square or round cake tin.
  2. In a bowl, whisk together the buckwheat flour, baking powder, baking soda and salt.
  3. In a separate large bowl, mash the bananas until smooth, then stir in the maple syrup, applesauce, grated ginger, lemon juice and vanilla until well combined.
  4. Add the dry ingredients to the wet mixture and fold gently with a spatula just until no dry flour remains; the batter will be thick, so avoid overmixing.
  5. Fold in most of the chocolate chips, then pour the batter into the prepared tin, smooth the top, and scatter the remaining chips over the surface.
  6. Bake for 35 to 40 minutes, until the cake is risen and a skewer inserted into the center comes out clean apart from melted chocolate.
  7. Let the cake cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
