How to make it
- Preheat the oven to 180C (350F) and grease and line a 20 cm square or round cake tin.
- In a bowl, whisk together the buckwheat flour, baking powder, baking soda and salt.
- In a separate large bowl, mash the bananas until smooth, then stir in the maple syrup, applesauce, grated ginger, lemon juice and vanilla until well combined.
- Add the dry ingredients to the wet mixture and fold gently with a spatula just until no dry flour remains; the batter will be thick, so avoid overmixing.
- Fold in most of the chocolate chips, then pour the batter into the prepared tin, smooth the top, and scatter the remaining chips over the surface.
- Bake for 35 to 40 minutes, until the cake is risen and a skewer inserted into the center comes out clean apart from melted chocolate.
- Let the cake cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
