How to make it

  1. Heat the oven to 200C (400F) and peel the potatoes, then cut each one lengthwise into thick wedges so they hold their shape through long roasting.
  2. Arrange the wedges in a single snug layer in a roasting tin and scatter the smashed garlic cloves between them.
  3. Whisk the olive oil, lemon juice, mustard, oregano, salt and pepper into the hot water or stock, then pour this liquid evenly over the potatoes until it comes about halfway up.
  4. Roast uncovered for 40 minutes, then turn the wedges so both cut sides brown evenly in the lemony juices.
  5. Continue roasting for a further 25 to 35 minutes until almost all the liquid has evaporated, the edges are golden and crisp and a fork slides easily through the centre.
  6. Let the potatoes rest for 5 minutes, spoon over any remaining pan juices and finish with an extra pinch of oregano before serving warm.
