How to make it
- Wash the swiss chard or collard greens thoroughly under cold running water, shake off the excess, and tear the leaves into rough pieces, discarding the toughest part of the stems.
- Rinse the cilantro and peel the ginger, then add the greens, cilantro, ginger and cold water to a blender, placing the leafy ingredients nearest the blade for a smoother result.
- Add the cubed pineapple and lime juice, then blend on high speed for 60 to 90 seconds until the mixture is completely smooth with no visible flecks of leaf.
- Taste and blend in the honey or maple syrup only if you want a sweeter juice, adjusting the lime to balance the sweetness.
- For a clearer, lighter juice, pour the blend through a fine mesh sieve or nut-milk bag set over a jug, pressing the pulp with a spoon to extract as much liquid as possible; skip this step if you prefer a thicker smoothie texture.
- Add the ice cubes, stir well, and serve immediately in chilled glasses, as fresh green juice separates and loses brightness quickly once made.
