How to make it

  1. Halve the aubergines lengthwise and score the cut faces in a fine crosshatch pattern, taking care not to cut through the skin, which helps them cook through and absorb flavour.
  2. Brush the cut sides generously with vegetable oil and let them sit for a few minutes so the oil soaks in.
  3. Heat a grill pan or grill to medium and cook the aubergines cut-side down first for about 5 minutes, then turn and cook the skin side for a further 6 to 8 minutes until the flesh is completely soft and creamy.
  4. Meanwhile, whisk together the miso paste, sugar, mirin and dashi in a small saucepan and warm gently over low heat, stirring, until the sugar dissolves and the glaze is smooth.
  5. Spread the warm miso glaze over the cut faces of the grilled aubergines.
  6. Return them to the grill, glaze-side up, for 2 to 3 minutes until the topping bubbles and caramelises lightly; watch closely so it does not burn.
  7. Toast the sesame seeds in a dry pan until fragrant, then scatter them with the sliced spring onion over the aubergines and serve hot.
