Grilled Aubergine

How to make it
- Halve the aubergines lengthwise and score the cut faces in a fine crosshatch pattern, taking care not to cut through the skin, which helps them cook through and absorb flavour.
- Brush the cut sides generously with vegetable oil and let them sit for a few minutes so the oil soaks in.
- Heat a grill pan or grill to medium and cook the aubergines cut-side down first for about 5 minutes, then turn and cook the skin side for a further 6 to 8 minutes until the flesh is completely soft and creamy.
- Meanwhile, whisk together the miso paste, sugar, mirin and dashi in a small saucepan and warm gently over low heat, stirring, until the sugar dissolves and the glaze is smooth.
- Spread the warm miso glaze over the cut faces of the grilled aubergines.
- Return them to the grill, glaze-side up, for 2 to 3 minutes until the topping bubbles and caramelises lightly; watch closely so it does not burn.
- Toast the sesame seeds in a dry pan until fragrant, then scatter them with the sliced spring onion over the aubergines and serve hot.
