How to make it

  1. Wear gloves when handling the habaneros, as their oils are intensely hot and will linger on skin. Stem the peppers and, for a milder sauce, remove some or all of the seeds.
  2. Add the carrot to a small saucepan with a little water and simmer for about 5 minutes until just softened, which mellows and balances the heat.
  3. Combine the habaneros, garlic, softened carrot, vinegar, lime juice, honey, and salt in a blender.
  4. Blend on high until completely smooth, about 1 minute, stopping to scrape down the sides as needed and adding a splash of water if too thick.
  5. Pour the puree into a small saucepan and simmer gently for 5 minutes to meld the flavors and lightly cook the garlic, keeping the kitchen well ventilated as the fumes are sharp.
  6. Let cool, then taste carefully and adjust salt, honey, or lime. Transfer to a clean sterilized bottle and refrigerate for up to 1 month, shaking before each use.
