How to make it
- Wear gloves when handling the habaneros, as their oils are intensely hot and will linger on skin. Stem the peppers and, for a milder sauce, remove some or all of the seeds.
- Add the carrot to a small saucepan with a little water and simmer for about 5 minutes until just softened, which mellows and balances the heat.
- Combine the habaneros, garlic, softened carrot, vinegar, lime juice, honey, and salt in a blender.
- Blend on high until completely smooth, about 1 minute, stopping to scrape down the sides as needed and adding a splash of water if too thick.
- Pour the puree into a small saucepan and simmer gently for 5 minutes to meld the flavors and lightly cook the garlic, keeping the kitchen well ventilated as the fumes are sharp.
- Let cool, then taste carefully and adjust salt, honey, or lime. Transfer to a clean sterilized bottle and refrigerate for up to 1 month, shaking before each use.
