How to make it

  1. Put the dried chickpeas in a large bowl, cover them with plenty of cold water and leave to soak overnight, as they will roughly double in size.
  2. Drain the chickpeas, place them in a pot with the baking soda and stir over medium heat for 2 minutes, then cover generously with fresh water and bring to the boil.
  3. Simmer for 40 to 60 minutes, skimming off any foam and loose skins, until the chickpeas are very soft and squash easily between two fingers, then drain and reserve a few for garnish.
  4. While still warm, blend the chickpeas in a food processor until thick and pasty, scraping down the sides as needed.
  5. Add the tahini, crushed garlic, lemon juice, cumin and salt, then blend again until combined.
  6. With the motor running, trickle in the ice water a spoonful at a time until the hummus turns pale, smooth and fluffy, adjusting salt and lemon to taste.
  7. Spread into a shallow bowl, swirl the surface, drizzle with olive oil and scatter the reserved chickpeas and chopped parsley over the top to serve.
