Hummus I

How to make it
- Put the dried chickpeas in a large bowl, cover them with plenty of cold water and leave to soak overnight, as they will roughly double in size.
- Drain the chickpeas, place them in a pot with the baking soda and stir over medium heat for 2 minutes, then cover generously with fresh water and bring to the boil.
- Simmer for 40 to 60 minutes, skimming off any foam and loose skins, until the chickpeas are very soft and squash easily between two fingers, then drain and reserve a few for garnish.
- While still warm, blend the chickpeas in a food processor until thick and pasty, scraping down the sides as needed.
- Add the tahini, crushed garlic, lemon juice, cumin and salt, then blend again until combined.
- With the motor running, trickle in the ice water a spoonful at a time until the hummus turns pale, smooth and fluffy, adjusting salt and lemon to taste.
- Spread into a shallow bowl, swirl the surface, drizzle with olive oil and scatter the reserved chickpeas and chopped parsley over the top to serve.
