How to make it
- Cut the tempeh into slabs about 1 cm thick, then halve into bite-sized rectangles so they fry evenly.
- Pound or blend the garlic, shallots, coriander, turmeric and a pinch of salt into a rough paste, then loosen it with the soy sauce and water in a shallow bowl.
- Submerge the tempeh in the marinade and leave for at least 20 minutes, turning once so every piece soaks up the spices.
- Heat the oil in a wok or deep frying pan to about 175°C, until a scrap of tempeh sizzles steadily on contact.
- Lift the tempeh from the marinade, letting excess drip off, and fry in batches for 4 to 5 minutes per batch until deep golden and crisp at the edges, turning halfway.
- Drain the fried tempeh on a rack or paper towel, season with a little more salt, and serve hot with rice or as a crunchy side.
