How to make it
- Boil the unpeeled potatoes in salted water for 30 to 40 minutes until tender to the tip of a knife, then drain, peel while warm and press through a ricer.
- Spread the riced potato to cool slightly, then add the egg yolk, a pinch of salt and most of the flour, working it gently into a soft dough without overkneading.
- Roll portions into ropes about 2 cm thick, cut into 2 cm pillows, and press each over a fork or gnocchi board to form ridges, dusting with flour as you go.
- Meanwhile, warm the olive oil with the sliced garlic over medium heat for 1 minute, add the passata with a pinch of salt, and simmer for 15 minutes until thickened.
- Cook the gnocchi in batches in plenty of boiling salted water, lifting them out about 30 seconds after they float to the surface.
- Toss the drained gnocchi through the tomato sauce with torn basil, finish with grated parmesan and black pepper, and serve immediately.
