How to make it
- Mix the flour, yeast and salt, then add the warm water and oil and knead for 10 minutes until you have a smooth, elastic dough; cover and prove for 1.5 to 2 hours until doubled.
- Divide the dough into four balls, cover, and rest for a further 30 minutes while you crush the tomatoes with a pinch of salt to make a simple raw sauce.
- Tear the mozzarella into pieces and set on paper towels to drain so the finished pizza does not turn watery.
- Stretch each dough ball by hand into a thin round on a floured peel or tray, keeping a slightly thicker rim, and spread a thin layer of tomato to within a centimetre of the edge.
- Bake one at a time on a preheated stone or upturned tray at the hottest oven setting, around 250C, for 7 to 10 minutes until the crust is blistered and golden.
- Add the mozzarella for the last 3 minutes so it just melts, then finish with fresh basil, a drizzle of olive oil and a grind of pepper before serving.
