How to make it
- Bring a large pot of salted water to the boil and cook the penne until al dente, reserving a cup of the cooking water before draining.
- While the pasta cooks, warm the olive oil in a wide pan over medium-low heat and add the thinly sliced garlic and chili flakes, cooking slowly for 2-3 minutes until the garlic is fragrant and pale gold but not browned.
- Pour in the chopped tomatoes, season with salt, and simmer for 12-15 minutes, stirring occasionally, until the sauce thickens and turns rich and glossy.
- Stir most of the chopped parsley into the sauce and taste for heat and salt, adjusting the chili to your liking.
- Add the drained penne to the pan and toss over the heat for a minute so the pasta absorbs the sauce, loosening with a splash of pasta water if needed.
- Serve at once topped with the remaining parsley and a final drizzle of olive oil; traditionally arrabbiata is served without cheese.
