How to make it
- Boil the unpeeled potatoes whole in salted water for 30 to 40 minutes until a knife slides through easily, then drain and peel them while still hot.
- Pass the potatoes through a ricer or mash them very smoothly onto a clean surface and spread them out to cool and release steam for a few minutes.
- Make a well in the potato, add the beaten egg, salt and a pinch of nutmeg, then sprinkle over most of the flour and gently bring together into a soft dough, adding more flour only if it sticks.
- Roll pieces of dough into long ropes about 2 cm thick, cut into short pillows and, if you like, press each one over the back of a fork to make ridges.
- Cook the gnocchi in batches in a wide pot of gently boiling salted water, and as soon as they float to the surface give them about 30 seconds more, then lift out with a slotted spoon.
- Melt the butter in a pan with the sage leaves until it smells nutty, add the drained gnocchi and toss to coat, then serve scattered with grated parmesan.
