How to make it
- Whisk the flour with the cold dashi until smooth and let the batter rest for 10 minutes, then finely shred the cabbage and slice the spring onions.
- Stir the cabbage, spring onions, chopped pickled ginger and the eggs into the batter, mixing just until everything is coated into a thick, chunky mixture; work in two batches if needed.
- Heat a little oil in a large non-stick frying pan over medium heat and spoon in a quarter of the mixture, shaping it into a round cake about 2 cm thick without pressing it down too hard.
- Lay slices of pork belly flat over the top, cook for 5 to 6 minutes until the underside is golden, then carefully flip and cook for another 5 to 6 minutes so the pork crisps and the centre is set and cooked through.
- Flip once more so the pork side is down for a final minute to glaze, then slide onto a plate.
- Brush generously with okonomiyaki sauce, drizzle over the mayonnaise in fine lines, and finish with a scattering of bonito flakes and seaweed flakes while hot.
