How to make it

  1. Whisk the flour with the cold dashi until smooth and let the batter rest for 10 minutes, then finely shred the cabbage and slice the spring onions.
  2. Stir the cabbage, spring onions, chopped pickled ginger and the eggs into the batter, mixing just until everything is coated into a thick, chunky mixture; work in two batches if needed.
  3. Heat a little oil in a large non-stick frying pan over medium heat and spoon in a quarter of the mixture, shaping it into a round cake about 2 cm thick without pressing it down too hard.
  4. Lay slices of pork belly flat over the top, cook for 5 to 6 minutes until the underside is golden, then carefully flip and cook for another 5 to 6 minutes so the pork crisps and the centre is set and cooked through.
  5. Flip once more so the pork side is down for a final minute to glaze, then slide onto a plate.
  6. Brush generously with okonomiyaki sauce, drizzle over the mayonnaise in fine lines, and finish with a scattering of bonito flakes and seaweed flakes while hot.
