How to make it

  1. Soak the badam pisin in the water for at least 6 hours or overnight, during which it will swell into a soft, jelly-like mass. Break it up gently with a spoon and keep it chilled.
  2. Pour the milk into a heavy-based pan and bring to a gentle boil, then lower the heat and simmer, stirring often, for about 20 minutes until it reduces and thickens slightly.
  3. Stir in the sugar and grated khova and keep cooking for a further 5 minutes until both have dissolved and the milk is creamy. Add the cardamom powder, then remove from the heat and cool completely before chilling in the fridge.
  4. To assemble each glass, spoon in a generous layer of the soaked badam pisin jelly at the bottom.
  5. Drizzle a tablespoon of the nannari sarsaparilla syrup over the jelly so it pools and streaks down the sides.
  6. Pour the chilled sweetened milk over the top, leaving a little room at the rim, and finish with a swirl of fresh cream. Serve very cold, stirring lightly just before drinking.
