How to make it
- Wash and dry the lemons thoroughly, then cut each into 8 small wedges or chunks, removing any visible seeds, and slit the green chiles lengthwise.
- Place the lemon pieces and chiles in a clean, dry bowl, add the salt, and toss until every piece is well coated.
- Transfer the mixture to a sterilized glass jar, press down to release the juices, seal, and leave in a warm sunny spot for 4 to 5 days, shaking the jar once daily so the lemons soften in their own brine.
- Toast the mustard and fenugreek seeds in a dry pan over medium heat for about 1 minute until fragrant, then grind them coarsely once cool.
- Heat the oil until shimmering, remove from the heat, and let it cool for a minute before stirring in the ground mustard and fenugreek, the ground ginger and the turmeric to make a tempering.
- Stir the sugar and the spiced oil into the softened lemons, mixing well so the sugar begins to dissolve and the turmeric colors everything evenly.
- Reseal the jar and return it to a warm place for 2 to 3 more days, stirring daily, until the rinds are tender and the pickle has mellowed before serving with rice or flatbread.
