How to make it

  1. Wash and dry the lemons thoroughly, then cut each into 8 small wedges or chunks, removing any visible seeds, and slit the green chiles lengthwise.
  2. Place the lemon pieces and chiles in a clean, dry bowl, add the salt, and toss until every piece is well coated.
  3. Transfer the mixture to a sterilized glass jar, press down to release the juices, seal, and leave in a warm sunny spot for 4 to 5 days, shaking the jar once daily so the lemons soften in their own brine.
  4. Toast the mustard and fenugreek seeds in a dry pan over medium heat for about 1 minute until fragrant, then grind them coarsely once cool.
  5. Heat the oil until shimmering, remove from the heat, and let it cool for a minute before stirring in the ground mustard and fenugreek, the ground ginger and the turmeric to make a tempering.
  6. Stir the sugar and the spiced oil into the softened lemons, mixing well so the sugar begins to dissolve and the turmeric colors everything evenly.
  7. Reseal the jar and return it to a warm place for 2 to 3 more days, stirring daily, until the rinds are tender and the pickle has mellowed before serving with rice or flatbread.
