How to make it
- Wash the cucumbers and slice them as thinly as possible, then peel the onion and slice it into thin half-moons.
- Place the cucumber and onion slices in a large bowl, sprinkle with the salt, and toss to coat.
- Let the salted vegetables sit for about 15 minutes to draw out some moisture, then gently press or drain off any excess liquid.
- In a separate bowl or jar, whisk together the vinegar, water, sugar, and vegetable oil until the sugar fully dissolves.
- Pour the vinegar mixture over the cucumbers and onions and toss until everything is evenly coated.
- Cover and refrigerate for at least 1 hour, stirring once or twice, so the vegetables soften slightly and absorb the tangy-sweet brine.
- Taste and adjust with a pinch more sugar or salt if needed, then serve chilled as a crisp side; the cucumbers keep well in the fridge for up to 3 days.
