How to make it
- Heat the oven to 180 C (350 F) and lightly grease a loaf tin or line a small baking tray.
- In a large bowl, beat the eggs with the water and soy sauce until smooth.
- Stir in the dry stuffing mix and chopped onion, then let the mixture sit for about 5 minutes so the crumbs soften and absorb the liquid.
- Add the ground beef along with a little salt and pepper, then mix gently with your hands just until everything is combined; avoid overworking so the loaf stays tender.
- Press the mixture into the loaf tin and smooth the top, or shape it into a free-form loaf on the tray.
- Bake for 50 to 60 minutes, until the loaf is firm and the juices run clear, and an instant-read thermometer in the centre reads at least 71 C (160 F).
- Let the meatloaf rest for 10 minutes before slicing so it holds together, then serve.
