How to make it
- Finely chop the onion, cilantro and seeded chili, then grate or mince the garlic and dice the tomato, discarding the watery core.
- Halve the avocados, remove the pits, and scoop the flesh into a bowl.
- Mash the avocado with a fork to your preferred texture, leaving it a little chunky for body.
- Squeeze in the lime juice and add a generous pinch of salt, stirring to brighten the flavor and keep the color fresh.
- Fold in the chopped onion, chili, garlic, cilantro and tomato until evenly distributed.
- Taste and adjust with more lime or salt, then serve right away with tortilla chips, pressing a little plastic wrap onto the surface if holding to slow browning.
