How to make it
- Cut the bread into thick slices, ideally slightly stale, and toast or grill them until the surfaces are crisp and golden but still a little chewy inside.
- While the toast is still warm, halve a garlic clove and rub the cut face lightly over each slice so it perfumes the bread without overpowering it.
- Halve the ripe tomatoes across the equator and rub the cut side firmly over the rough toast so the pulp and juice soak in, leaving the empty skins behind.
- Drizzle each slice generously with the extra virgin olive oil so it pools into the crumb and carries the tomato through the bread.
- Finish with a scattering of flaky sea salt and serve immediately while the toast is still crisp, before the tomato softens it.
