How to make it

  1. Cut the bread into thick slices, ideally slightly stale, and toast or grill them until the surfaces are crisp and golden but still a little chewy inside.
  2. While the toast is still warm, halve a garlic clove and rub the cut face lightly over each slice so it perfumes the bread without overpowering it.
  3. Halve the ripe tomatoes across the equator and rub the cut side firmly over the rough toast so the pulp and juice soak in, leaving the empty skins behind.
  4. Drizzle each slice generously with the extra virgin olive oil so it pools into the crumb and carries the tomato through the bread.
  5. Finish with a scattering of flaky sea salt and serve immediately while the toast is still crisp, before the tomato softens it.
