How to make it

  1. Warm the olive oil in a large pot over medium heat, then add the diced onions and cook for 5 to 6 minutes until soft and translucent.
  2. Stir in the minced garlic and chopped red bell peppers, and cook for another 4 minutes until the peppers begin to soften.
  3. Add the cumin and oregano and toast for about 30 seconds until fragrant, then stir in the chopped fresh tomatoes and tomato sauce.
  4. Pour in the vegetable stock, season with salt, and bring to a gentle boil, then lower the heat and simmer uncovered for 20 minutes.
  5. Stir in the sweet corn kernels and simmer for a further 5 minutes so the corn heats through while keeping a little bite.
  6. For a smoother texture, blend about half the soup with an immersion blender and return it to the pot, or leave it chunky if preferred.
  7. Finish with a squeeze of fresh lime juice, taste and adjust the salt, and serve hot topped with chopped cilantro and the sliced onion or leek greens.
