Mexican Tomato Soup

How to make it
- Warm the olive oil in a large pot over medium heat, then add the diced onions and cook for 5 to 6 minutes until soft and translucent.
- Stir in the minced garlic and chopped red bell peppers, and cook for another 4 minutes until the peppers begin to soften.
- Add the cumin and oregano and toast for about 30 seconds until fragrant, then stir in the chopped fresh tomatoes and tomato sauce.
- Pour in the vegetable stock, season with salt, and bring to a gentle boil, then lower the heat and simmer uncovered for 20 minutes.
- Stir in the sweet corn kernels and simmer for a further 5 minutes so the corn heats through while keeping a little bite.
- For a smoother texture, blend about half the soup with an immersion blender and return it to the pot, or leave it chunky if preferred.
- Finish with a squeeze of fresh lime juice, taste and adjust the salt, and serve hot topped with chopped cilantro and the sliced onion or leek greens.
