Mushroom Ketchup

How to make it
- Wipe the mushrooms clean, slice them thinly, then layer them in a non-reactive bowl with the salt, cover and leave at room temperature for 24 hours, stirring occasionally as they release their dark liquid.
- Tip the salted mushrooms and all their juices into a saucepan, add the finely chopped onion, grated horseradish, lemon zest, allspice, peppercorns and cayenne.
- Pour in the cider vinegar, stir well, and bring the mixture slowly up to a gentle boil over medium heat.
- Lower the heat and simmer uncovered for about 30 minutes, stirring now and then, until the mushrooms are very soft and the liquid is deeply colored.
- Strain the mixture through a fine sieve, pressing firmly on the solids with the back of a spoon to extract all the liquid, then discard the pulp.
- Return the strained liquid to the cleaned pan and simmer for a further 10 to 15 minutes until it reduces and thickens slightly into a thin, pourable sauce.
- Pour the hot ketchup into a clean sterilized bottle or jar, seal, cool completely, and store in the refrigerator, using within a few weeks.
