How to make it

  1. Wipe the mushrooms clean, slice them thinly, then layer them in a non-reactive bowl with the salt, cover and leave at room temperature for 24 hours, stirring occasionally as they release their dark liquid.
  2. Tip the salted mushrooms and all their juices into a saucepan, add the finely chopped onion, grated horseradish, lemon zest, allspice, peppercorns and cayenne.
  3. Pour in the cider vinegar, stir well, and bring the mixture slowly up to a gentle boil over medium heat.
  4. Lower the heat and simmer uncovered for about 30 minutes, stirring now and then, until the mushrooms are very soft and the liquid is deeply colored.
  5. Strain the mixture through a fine sieve, pressing firmly on the solids with the back of a spoon to extract all the liquid, then discard the pulp.
  6. Return the strained liquid to the cleaned pan and simmer for a further 10 to 15 minutes until it reduces and thickens slightly into a thin, pourable sauce.
  7. Pour the hot ketchup into a clean sterilized bottle or jar, seal, cool completely, and store in the refrigerator, using within a few weeks.
