How to make it

  1. Season the beef with salt, pepper, and one crumbled stock cube, then place it in a pot with one chopped onion and enough water to cover and simmer for about 45 minutes until tender and cooked through to at least 71 C (160 F), reserving the stock.
  2. Meanwhile, blend the tomatoes, one onion, the scotch bonnet peppers, garlic, and ginger into a coarse puree.
  3. Heat the vegetable oil in a wide pot over medium heat and brown the boiled beef pieces for a few minutes, then remove and set aside.
  4. Pour the blended tomato-pepper mixture into the same pot and fry for 10 to 12 minutes, stirring often, until the raw smell disappears and the sauce thickens and darkens.
  5. Stir in the curry powder, the remaining stock cube, and some of the reserved beef stock, then return the beef to the pot and add the peeled, thickly sliced carrots.
  6. Cover and simmer for 12 to 15 minutes until the carrots are tender but still hold their shape, adding more stock if the stew gets too thick.
  7. Taste and adjust the salt and pepper, then serve the carrot stew hot with rice, boiled yam, or plantain.
