How to make it
- Season the beef with salt, pepper, and one crumbled stock cube, then place it in a pot with one chopped onion and enough water to cover and simmer for about 45 minutes until tender and cooked through to at least 71 C (160 F), reserving the stock.
- Meanwhile, blend the tomatoes, one onion, the scotch bonnet peppers, garlic, and ginger into a coarse puree.
- Heat the vegetable oil in a wide pot over medium heat and brown the boiled beef pieces for a few minutes, then remove and set aside.
- Pour the blended tomato-pepper mixture into the same pot and fry for 10 to 12 minutes, stirring often, until the raw smell disappears and the sauce thickens and darkens.
- Stir in the curry powder, the remaining stock cube, and some of the reserved beef stock, then return the beef to the pot and add the peeled, thickly sliced carrots.
- Cover and simmer for 12 to 15 minutes until the carrots are tender but still hold their shape, adding more stock if the stew gets too thick.
- Taste and adjust the salt and pepper, then serve the carrot stew hot with rice, boiled yam, or plantain.
