How to make it
- Soak the stockfish in hot water for about 30 minutes until softened, then drain and break it into bite-sized pieces.
- Place the assorted beef in a pot with one chopped onion, one crumbled seasoning cube and a little salt, add just enough water to cover and simmer for 30 to 40 minutes until the meat is tender, then add the stockfish for the final 10 minutes.
- Blend the bell peppers, scotch bonnet and the second onion into a coarse paste and stir it into the pot, simmering for 8 to 10 minutes so the raw pepper flavour cooks out.
- Pour in the palm oil, then add the ground crayfish, ogili and the remaining seasoning cube, and let it bubble gently for 5 minutes to bring the flavours together.
- Taste the broth and adjust the salt, keeping in mind the greens will release a little water once added.
- Stir in the chopped leafy greens, cook for just 3 to 5 minutes so they wilt but stay vibrant, then turn off the heat and serve hot with a swallow of your choice.
