How to make it

  1. Soak the stockfish in hot water for about 30 minutes until softened, then drain and break it into bite-sized pieces.
  2. Place the assorted beef in a pot with one chopped onion, one crumbled seasoning cube and a little salt, add just enough water to cover and simmer for 30 to 40 minutes until the meat is tender, then add the stockfish for the final 10 minutes.
  3. Blend the bell peppers, scotch bonnet and the second onion into a coarse paste and stir it into the pot, simmering for 8 to 10 minutes so the raw pepper flavour cooks out.
  4. Pour in the palm oil, then add the ground crayfish, ogili and the remaining seasoning cube, and let it bubble gently for 5 minutes to bring the flavours together.
  5. Taste the broth and adjust the salt, keeping in mind the greens will release a little water once added.
  6. Stir in the chopped leafy greens, cook for just 3 to 5 minutes so they wilt but stay vibrant, then turn off the heat and serve hot with a swallow of your choice.
