How to make it

  1. Heat the oven to 175 C (350 F) and line two baking sheets with parchment paper.
  2. In a large bowl, cream the shortening with the brown sugar and white sugar until light and fluffy.
  3. Beat in the egg, water, and vanilla until the mixture is smooth and evenly blended.
  4. Whisk together the flour, baking soda, and salt, then stir into the wet mixture until just combined.
  5. Fold in the rolled oats until evenly distributed; the dough will be thick and slightly sticky.
  6. Drop rounded tablespoons of dough onto the baking sheets, spacing them about 5 cm apart to allow for spreading.

  8. Let the cookies cool on the sheet for 5 minutes to set, then transfer to a wire rack to cool completely.
