How to make it

  1. Rinse the ofada rice several times in cold water until the water runs clearer, then parboil it in plenty of water for about 10 minutes, drain and set aside.
  2. Blend the fresh tomatoes, red bell peppers, tinned tomatoes, one onion, the ginger, garlic and scotch bonnet to a smooth puree.
  3. Heat the groundnut oil in a heavy pot over medium heat, add the second onion finely chopped and fry until fragrant and golden.
  4. Pour in the blended pepper mixture with the bay leaves and fry, stirring often, for 15 to 20 minutes until the raw smell disappears and the oil begins to surface.
  5. Stir in the curry powder, crumbled stock cube and salt, then add the parboiled rice and enough water or stock to just cover it.
  6. Cover tightly and cook on low heat, stirring occasionally so it does not stick, until the rice is tender and the liquid is absorbed, about 25 to 30 minutes.
  7. Remove from the heat, fluff gently with a fork, discard the bay leaves and let it rest covered for 5 minutes before serving.
