Ofada Jollof Rice

How to make it
- Rinse the ofada rice several times in cold water until the water runs clearer, then parboil it in plenty of water for about 10 minutes, drain and set aside.
- Blend the fresh tomatoes, red bell peppers, tinned tomatoes, one onion, the ginger, garlic and scotch bonnet to a smooth puree.
- Heat the groundnut oil in a heavy pot over medium heat, add the second onion finely chopped and fry until fragrant and golden.
- Pour in the blended pepper mixture with the bay leaves and fry, stirring often, for 15 to 20 minutes until the raw smell disappears and the oil begins to surface.
- Stir in the curry powder, crumbled stock cube and salt, then add the parboiled rice and enough water or stock to just cover it.
- Cover tightly and cook on low heat, stirring occasionally so it does not stick, until the rice is tender and the liquid is absorbed, about 25 to 30 minutes.
- Remove from the heat, fluff gently with a fork, discard the bay leaves and let it rest covered for 5 minutes before serving.
