Orange Brulée

How to make it
- Slice the top and bottom off each orange, then cut away the peel and white pith, and slice the fruit crosswise into rounds about half an inch thick.
- Arrange the orange slices in a single layer on a heatproof baking tray or in individual gratin dishes.
- Melt the butter and brush it lightly over the orange slices, then stir the cinnamon into the brown sugar.
- Sprinkle the cinnamon sugar evenly over the fruit so each slice has a thin, even coating.
- Set the tray under a hot broiler for 3 to 5 minutes, watching closely, until the sugar bubbles, melts, and caramelises to a deep amber.
- Let the oranges cool for a couple of minutes so the caramel sets into a brittle glaze.
- Divide the brûléed oranges among four plates, add a generous spoonful of vanilla yogurt to each, and garnish with fresh mint leaves before serving.
