How to make it

  1. Preheat the oven to 200C (400F) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the diced beef, potato, swede and onion together, then season generously with salt and plenty of black pepper and toss with the plain flour.
  3. Divide the pastry into four equal pieces and roll each out on a floured surface into a circle about 20 cm (8 inches) across, using a plate as a guide.
  4. Pile a quarter of the filling onto one half of each pastry circle, leaving a clear border, and dot each mound with a little of the butter.
  5. Brush the pastry edges with water, fold the pastry over the filling to make a half-moon, then press and crimp the curved edge firmly to seal.
  6. Transfer the pasties to the baking sheet, cut a small steam vent in the top of each, and brush all over with milk to glaze.
  7. Bake for 15 minutes, then lower the oven to 180C (350F) and bake for a further 45 minutes until the pastry is golden and the filling is tender and the beef is cooked through.
  8. Let the pasties rest for 10 minutes before serving so the filling sets slightly.
