Pasties

A fuss-free beef built around beef round, finely diced, potatoes, peeled and diced and swede (rutabaga), peeled and diced β roughly 70 minutes start to finish, and rated medium to make. How to make it
- Preheat the oven to 200C (400F) and line a baking sheet with parchment paper.
- In a large bowl, mix the diced beef, potato, swede and onion together, then season generously with salt and plenty of black pepper and toss with the plain flour.
- Divide the pastry into four equal pieces and roll each out on a floured surface into a circle about 20 cm (8 inches) across, using a plate as a guide.
- Pile a quarter of the filling onto one half of each pastry circle, leaving a clear border, and dot each mound with a little of the butter.
- Brush the pastry edges with water, fold the pastry over the filling to make a half-moon, then press and crimp the curved edge firmly to seal.
- Transfer the pasties to the baking sheet, cut a small steam vent in the top of each, and brush all over with milk to glaze.
- Bake for 15 minutes, then lower the oven to 180C (350F) and bake for a further 45 minutes until the pastry is golden and the filling is tender and the beef is cooked through.
- Let the pasties rest for 10 minutes before serving so the filling sets slightly.
