How to make it

  1. Peel the unripe plantains, cut them into chunks, and blend with the water until you have a smooth, thick batter, working in batches if needed.
  2. Roughly blend the tomatoes, red bell pepper, scotch bonnet, and onion into a coarse paste and set aside.
  3. Stir the pepper paste, ground crayfish, crushed seasoning cubes, salt, and vegetable oil into the plantain batter until the mixture is evenly combined and pourable.
  4. Grease individual heatproof ramekins or a foil-lined dish and divide the batter among them, leaving room for slight rising.
  5. Set a steamer or a wide pot with a rack and a few inches of simmering water, place the filled containers inside, and cover tightly.
  6. Steam over medium heat for 35 to 45 minutes, until the pudding is set firm and a skewer inserted in the centre comes out clean.
  7. Let the puddings rest for 5 minutes, then unmould and serve warm on their own or with a spoonful of pepper sauce.
