How to make it

  1. Spatchcock the chicken by cutting out the backbone with kitchen shears and pressing firmly on the breast to flatten it, which helps it cook evenly and quickly.
  2. Blitz the chillies, garlic, juice of one lemon, paprika, vinegar, oregano, the crumbled bay leaf, half the olive oil and a generous pinch of salt into a smooth piri-piri marinade.
  3. Rub the chicken all over and under the skin with most of the marinade, reserving some for basting, then cover and chill for at least 2 hours or ideally overnight.
  4. Roast in an oven preheated to 200°C for about 45 to 55 minutes, or grill over medium coals skin-side down then turning, basting with the reserved marinade, until the skin is charred and crisp.
  5. Check that the chicken is fully cooked, with the juices running clear and the thickest part of the thigh reaching at least 75°C on a thermometer.
  6. Rest the chicken for 10 minutes, then cut into pieces and serve with the remaining lemon cut into wedges and any roasting juices spooned over.
