How to make it

  1. Trim the leeks, discarding the tough dark green tops, then slice the white and pale green parts and rinse thoroughly in a bowl of cold water to wash out any grit; drain well.
  2. Peel the potatoes and cut them into rough 2 cm chunks so they cook evenly.
  3. Melt the butter in a large pot over medium heat, add the leeks, and sweat them gently for about 6 to 8 minutes until soft but not browned.
  4. Add the potatoes, water, and sea salt, bring to a boil, then reduce to a simmer and cook partially covered for 25 to 30 minutes, until the potatoes are completely tender.
  5. Purée the soup until smooth using a blender or immersion blender, working in batches and taking care with the hot liquid; for a rustic version you can simply mash it coarsely instead.
  6. Return the soup to low heat, stir in the heavy cream, and warm through without letting it boil, then season with white pepper and adjust the salt to taste.
  7. Ladle into bowls and finish with a scattering of chopped flat-leaf parsley and an extra swirl of cream if desired.
