How to make it
- Rinse the samp and beans mix well, then soak it in plenty of cold water overnight or for at least 6 hours to shorten the cooking time.
- Drain the soaked mix, place it in a large pot with about 8 cups of fresh water, bring to a boil, then reduce to a steady simmer and cook partially covered for 1.5 to 2 hours until the samp is soft and the beans are tender, topping up with hot water as needed.
- While that cooks, cut the beef or mutton into bite-sized pieces and brown it in the oil in a separate pan over medium-high heat on all sides.
- Add the chopped onion and garlic to the meat and cook until softened, then stir in the chopped tomatoes and let them break down into a sauce for about 10 minutes.
- Stir the meat and tomato mixture into the cooked samp and beans along with the crumbled stock cube, then season with salt and pepper.
- Simmer everything together for a further 30 to 40 minutes until the meat is fork-tender and fully cooked and the dish has thickened to a hearty stew, adjusting the seasoning before serving hot.
