How to make it

  1. Rinse the samp and beans mix well, then soak it in plenty of cold water overnight or for at least 6 hours to shorten the cooking time.
  2. Drain the soaked mix, place it in a large pot with about 8 cups of fresh water, bring to a boil, then reduce to a steady simmer and cook partially covered for 1.5 to 2 hours until the samp is soft and the beans are tender, topping up with hot water as needed.
  3. While that cooks, cut the beef or mutton into bite-sized pieces and brown it in the oil in a separate pan over medium-high heat on all sides.
  4. Add the chopped onion and garlic to the meat and cook until softened, then stir in the chopped tomatoes and let them break down into a sauce for about 10 minutes.
  5. Stir the meat and tomato mixture into the cooked samp and beans along with the crumbled stock cube, then season with salt and pepper.
  6. Simmer everything together for a further 30 to 40 minutes until the meat is fork-tender and fully cooked and the dish has thickened to a hearty stew, adjusting the seasoning before serving hot.
