How to make it

  1. Drain the sauerkraut in a colander and rinse it under cold water if you prefer a milder flavor, then squeeze out as much liquid as you can with your hands.
  2. Roughly chop the squeezed sauerkraut and finely dice the onion.
  3. Melt the butter in a skillet over medium heat and cook the onion for 6 to 8 minutes until soft and lightly golden.
  4. Add the chopped sauerkraut and the bay leaf and cook, stirring often, for 12 to 15 minutes until the sauerkraut is tender and any remaining moisture has cooked off.
  5. Season with black pepper and a little salt to taste, remembering the sauerkraut is already salty, then discard the bay leaf.
  6. Let the filling cool completely before spooning it into pierogi dough, as a hot filling will tear the wrappers.
