How to make it

  1. In a blender or with a fork, mash the tofu together with the cold water, soy sauce and 1 tablespoon of the oil until smooth and pourable.
  2. In a large bowl, whisk together the vital wheat gluten, white pepper, caraway, nutmeg, onion powder, garlic powder, smoked paprika and salt.
  3. Pour the wet mixture into the dry ingredients and stir until a shaggy dough forms, then knead it briefly for about 1 minute to develop a springy texture; do not over-knead or the sausages turn rubbery.
  4. Divide the dough into 8 equal portions, shape each into a sausage about 12 cm long, and wrap each snugly in a twist of foil, sealing the ends like a cracker.
  5. Set the foil-wrapped sausages in a steamer basket over simmering water and steam for 40 minutes, then let them cool in their wrappers for 15 minutes so the texture sets firm.
  6. Unwrap the bratwurst and brown them in the remaining oil in a skillet over medium heat, turning, for about 6 to 8 minutes until golden and lightly crisped all over, then serve hot.
