How to make it

  1. In a bowl, combine the smoked paprika, granulated garlic, salt, and black pepper to make a quick smokehouse rub.
  2. Gently break up the ground chuck and divide it into 4 equal portions, then loosely form each into a patty about 3/4 inch thick, pressing a shallow dimple into the center so the burgers stay flat while cooking.
  3. Season both sides of each patty generously with the rub, handling the meat as little as possible to keep the burgers tender.
  4. Heat a cast-iron skillet or grill over medium-high heat, brush the surface with the oil, and let it get hot until just shimmering.
  5. Cook the patties for about 3 to 4 minutes on the first side until a deep crust forms, then flip once and cook 3 to 4 minutes more, until the internal temperature reaches 160 F for food-safe ground beef.
  6. Lay a slice of pepper jack on each patty during the final minute and cover briefly so the cheese melts.
  7. Toast the cut sides of the buns on the hot surface for about 30 seconds, then assemble the burgers and serve right away with your favorite toppings.
