How to make it
- Preheat the oven to 180 C and line two baking sheets with parchment paper.
- In a bowl, whisk together the flour, cream of tartar, baking soda and salt and set aside.
- In a large bowl, beat the shortening with the 200 g of sugar until light and fluffy, then beat in the eggs one at a time followed by the vanilla.
- Gradually mix in the dry ingredients until a soft, even dough forms, then chill it for about 15 minutes to make it easier to handle.
- Stir together the 3 tablespoons of sugar with the ground cinnamon in a shallow dish.
- Roll the dough into walnut-sized balls, toss each one in the cinnamon sugar to coat thoroughly, then space them about 5 cm apart on the prepared sheets.
- Bake for 9 to 11 minutes until the cookies have spread, cracked on top and set at the edges but still look soft in the centre.
- Let the cookies rest on the sheet for 2 minutes to firm up, then transfer to a wire rack to cool completely.
