How to make it
- Peel and thinly slice the potatoes and onion, then gently poach them in the olive oil over medium-low heat for about 20 minutes until soft but not browned, and drain well, reserving a little of the oil.
- Beat the eggs with a good pinch of salt in a large bowl, fold in the warm drained potatoes and onion, and let the mixture rest for 5 minutes so the flavours mingle.
- Heat 1 tablespoon of the reserved oil in a non-stick pan, pour in the egg mixture, and cook over medium-low heat for about 4 minutes until the edges set.
- Cover the pan with a plate, flip the tortilla onto it, then slide it back to cook the other side for 3 to 4 minutes until just set and the eggs have reached at least 71°C for safety, then cool to room temperature.
- Split the baguettes or rolls, rub the cut sides with the halved tomato, and drizzle lightly with extra virgin olive oil and a pinch of salt.
- Cut thick wedges of the tortilla, tuck them into the bread, press gently, and serve at room temperature.
