How to make it
- Place the semolina, plain flour, yeast, sugar, and salt into a blender along with the egg and the warm water.
- Blend on high for about 1 minute until you have a smooth, thin, pourable batter with no lumps.
- Add the baking powder, blend for a few more seconds, then pour the batter into a bowl, cover, and let it rest in a warm place for 20 to 30 minutes until the surface is foamy.
- Heat a non-stick pan over medium heat without any oil, ensuring it is evenly hot before you begin.
- Pour a small ladle of batter into the centre and let it spread into a round; do not flip it, as it cooks on one side only.
- Cook each baghrir for about 2 minutes until the top is covered in tiny bubbles that burst to leave a honeycomb of holes and the surface looks dry.
- Remove to a plate and continue with the remaining batter, stacking the pancakes, then serve warm drizzled with a mixture of melted butter and honey.
