How to make it
- Thinly slice the onion and bell pepper, then heat the peanut oil in a wide skillet over medium heat.
- Add the onion and bell pepper and cook gently, stirring often, for 8 to 10 minutes until softened and lightly caramelised at the edges.
- Sprinkle the flour over the vegetables and stir for 1 minute, then pour in the white wine and let it bubble and reduce by half, scraping up any browned bits.
- Whisk the cashew butter into the milk in a separate bowl until smooth, then pour it into the skillet, stirring constantly.
- Simmer the gravy gently for 4 to 5 minutes, stirring, until it thickens to a smooth pourable consistency, adding a splash more milk if it becomes too thick.
- Season with salt and pepper to taste and serve hot over mashed potatoes, biscuits, rice or roasted vegetables.
