How to make it

  1. Heat the vegetable oil in a small frying pan over medium-low heat, add the diced onion and cook gently for 12 to 15 minutes, stirring often, until deeply golden and caramelised.
  2. Crumble the bouillon cube into the water to dissolve, then stir it into the onions and let it bubble for a minute until the pan is almost dry; remove from the heat and cool completely.
  3. In a bowl, whisk together the sour cream, mayonnaise, onion powder and garlic powder until smooth.
  4. Fold the cooled caramelised onions through the sour cream base, then season to taste with salt and pepper.
  5. Cover and refrigerate for at least 1 hour, or ideally overnight, to let the flavours meld and the dip thicken.
  6. Stir well before serving, scatter over the snipped chives and serve cold with crisps or raw vegetables.
