How to make it
- Scrub the potatoes and place them whole in a large pot, cover with cold salted water, bring to a boil, then simmer for 20 to 25 minutes until tender when pierced with a knife.
- Meanwhile, lower the eggs into a separate pot of boiling water and cook for 9 to 10 minutes, then transfer to ice water, peel, and chop finely once cool.
- Drain the potatoes, let them cool just enough to handle, then peel and cut into thick chunks, keeping them warm.
- To make the green sauce, whisk together the sour cream, milk, sunflower oil and lemon juice in a bowl until smooth and pourable.
- Fold in the chopped hard-boiled eggs along with the finely chopped dill and chives, then season generously with salt and black pepper.
- Taste the sauce and adjust with a little more lemon juice or salt as needed, loosening with an extra splash of milk if it is too thick.
- Arrange the warm potatoes on a serving platter and spoon the green sauce over the top, finishing with a few extra herbs before serving.
