How to make it
- Preheat the oven to 175C (350F) and grease and line a 23cm (9-inch) round cake tin.
- In a large bowl, whisk together the flour, bicarbonate of soda, ground cinnamon and salt until evenly combined.
- In a separate bowl, beat the eggs with the sugar, then pour in the vegetable oil and vanilla and whisk until the mixture is smooth and slightly pale.
- Gradually fold the dry ingredients into the wet mixture, stirring just until no streaks of flour remain to keep the crumb tender.
- Fold in the finely grated carrots and the chopped walnuts until evenly distributed through the batter.
- Pour the batter into the prepared tin, level the top, and bake for 40 to 45 minutes until risen and a skewer inserted into the centre comes out clean.
- Let the cake cool in the tin for 10 minutes, then turn it out onto a wire rack to cool completely before slicing or frosting.
